With the holidays right around the corner, our Sisters Share It All is featuring a quick, easy dinner idea. This was Janssen’s pick, and with a newborn coming to her house literally any day, on top of the holidays, I see why she chose it. And for me, in the midst of moving and having a newborn, it’s right up my alley.

My choice is one of my favorite comfort foods – Chicken Pot Pie. It’s one of those things that I don’t make very often, but when I do, I always wonder why I don’t make it more often. The flaky, buttery crust, the thick, creamy, and hearty filling…what’s not to love?

The best part is that you can make it ahead of time and refrigerate it until it’s time to cook. Oh, and we love making it in ramekins for some individual pot pies, but you can also make it in a regular pie pan (with or without the braided crust, of course).

3/4 to 1 cup chicken broth
1 small yukon gold potato, peeled and cut into small cubes
1/2 cup chopped carrots
1/2 medium onion, chopped
1/4 tsp dried thyme
salt and pepper to taste
1/2 cup milk mixed with 2 tablespoons flour
1 cup rotisserie chicken, chopped
1 pie crust, (I make this super easy one from Annie’s Eats, but a store bought one is fine)
Preheat oven to 425°F. Bring broth to a boil in a saucepan. Add the potato, carrot, onion, and thyme and simmer the mixture for 15 minutes or until vegetables are soft. Stir the flour mixture slowly into the vegetables and simmer, stirring until it is thick. Remove the pan from heat and stir in the chicken. Add pot pie filling to 4 ramekins or 1 9-inch pie plate. Cover with pie crust (cut in to quartered pieces if you’re making minis), cut a few slits in the surface, and bake for 15-20 minutes (for minis) or 25-30 for a regular 9-incher. Serve hot, and enjoy!

    As soon as I saw the monogrammed crust, I wondered if this recipe was from Dinner: A Love Story. I'm reading it right now, and I've been wanting to try a bunch of her recipes, and this is one of them! Have you tried anything else from her book?

    I have some turkey leftover from thanksgiving in the freezer and my husband has been asking me for three years to try a pot pie! this recipe just might convince me it's possible!

  10. YUM! When I had my first baby someone brought me a chicken pot pie. Nothing had ever tasted so good. Now it is my go to comfort food. I wish I could make my crust look as good as yours!
