Time for this week’s dinner ideas! I made two of my kids’ favorite dinner recipes, tried a new chicken skewer recipe that was a hit, and am trying a new Sunday dinner recipe this week.

Our weekly menu will give you some good dinner ideas! Here’s a quick review of what I cooked this week for our family dinners.

MONDAY: hot honey chicken skewers with green beans and Kaizen rice

This was a new recipe for me and it was so simple! I had to take one son to basketball practice, so I left the skewers for the rest of my family and they cooked them in the airfryer. Super easy and turned out great!

TUESDAY: blackened salmon, Kaizen rice, pan fried brussels sprouts

Blackened salmon is my kid’s favorite meal, and it’s so easy! I used the air fryer and it was perfect and super easy to clean up. I served with the leftover Kaizen rice (it’s low carb, high protein and so delicious), brussels sprouts, and fresh mango. My kids were so happy!

WEDNESDAY: French dip sandwiches and chips

Wednesday was a crazy busy day for us, so throwing this roast in the instant pot in the morning and having it cook all day was perfect. It turned out so tender and flavorful. I used a new Au Jus packet from Walmart, and the flavor was unreal…so good!!! I didn’t add any other spices, just seared the meat and then added this packet and water, and let it cook on high in the pressure cooker for a few hours.

THURSDAY: smash burgers with fries and fruit

I’ve been wanting to try these smash burgers from Shred Happens for a few weeks and finally tried — so good and so easy! Some of my kids preferred them on buns, so I had that option, and everyone was happy.

FRIDAY: BBQ chicken pizza

We make pizza every friday night, and BBQ chicken is our favorite. I always use the pizza dough recipe from Everyday Annie – it’s super easy and turns out every time.

SATURDAY: out to eat

SUNDAY: Birria Tacos

This is a new-to-me recipe, but we loooove birria tacos, so I’m hopeful that it turns out and tastes good!

    Planning out meals each week made dinner less of a scramble and more of a routine that actually stuck. I started batch-prepping on Sundays using simple proteins and rotating sauces, which made the rest of the week feel more flexible without falling into takeout traps. Around the same time, I switched focus to organizing other parts of life too—wardrobe being a big one.
