Friday-Sunday:
The boys and I went to Las Vegas for the long weekend to visit my parents, so I left some food for Philip in the fridge and freezer.
I made extra MEATBALLS for him to eat on a sandwich or with pasta, some breakfast burritos, and some leftover green Chile pork from a couple of weeks ago (I tossed it in a ziplock bag and put it in the freezer. Easy!
Meatball Soup
This is one of our favorite soups I’ve been making for our whole marriage. Lately, I’ve been making it with the meatballs from THIS RECIPE and the mix of the pork and beef together makes them super flavorful.
Bagel Sandwiches
I made these super simple breakfast sandwiches this week for dinner. We used everything bagels instead of croissants, and I had some avocado I needed to use up so I added that as well. This was a crowd-pleaser with the boys!
Burgers
Thursday was our last day of school for the year, so we did a special dinner and I grilled burgers. One of my goals this summer is to learn how to grill. I know the very basics, but I want to get a lot better and learn how to cook lots of things. This was a good start and the boys said it was the best burger ever (so now my head is getting really big about my grilling skills).
