Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners: 

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, March 31 – April 6

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

Almost my entire menu this week came from my new favorite food instagram account, Shred Happens…lots of good lower carb, higher protein meals that the whole family loves!

Here’s a quick review of our weekly dinners: 

Monday: Crispy Cheesy Carne Asada Tacos and Corn on the Cob

These were INSANELY good. I used ribeye steaks, which are definitely on the fattier side, but I cut off a lot of the fat as I cut into pieces, so these weren’t quite so heavy and rich. The crispy, cheesy tortillas, plus the guacamole and the perfectly seasoned steak? AMAZING. Will 100% be making these again.

Tuesday: Mediterranean Chicken Skewers and Corn Salsa

These were another easy weeknight meal that everyone loved! Making them in the air fryer made them a really quick week night dinner.

Wednesday: Spicy Chicken Tenders, Green Beans, and Roasted Sweet Potatoes

This recipe was a little more labor intensive, since I had to dip all of the tenderloins in the breadcrumb and egg mixture, and then also cook in batches in the air fryer, but they turned out delicious. My family didn’t love the spicy version, so I left some of them just regular without the sauce at the end, but I loved the spicy, saucy version!

Thursday: Salmon (and Tilapia) Power Bowls

These were a hit this week. My kids are huge salmon fans, but my husband isn’t, so I did salmon and tilapia. I tried with the recommended Kaisen rice, which is lower carb and higher protein, and it was delicious. Highly recommend if you’re trying to get more protein in your diet! I bought mine in a three pack on Amazon.

Friday: BBQ Chicken Pizza

We love BBQ chicken for friday pizza night! I’ve tried a few other pizza dough recipes lately and this one is definitely the best.

Saturday: Crepes

This weekend is our church’s General Conference, with broadcasts from our church leaders. We sit on the couch, eat yummy food, and listen to amazing and uplifting talks and music. One of our traditions is to eat crepes during Conference, and this is our go-to recipe. It’s easy and so yummy.

Sunday: Breakfast for Dinner, Cinnamon Rolls (Cinnamon, Raspberry), Eggs, Bacon

Another General Conference tradition is cinnamon rolls! I do half cinnamon, half raspberry rolls, using the cinnamon roll dough for both. They’re delicious!!
