This week’s dinners turned out delicious! I am loving making some hearty, winter meals for the last few weeks of cold weather here in Texas. I hope all of these recipes will be a hit for your family just like they are for us!

Chicken Roll-Ups and Roasted Carrots
These chicken roll ups were always my favorite meal growing up. I asked for them on my birthday every year! I don’t make them very often, but my kids requested them this week so I made them and served them with roasted carrots.
Sausage and Kale Gnocchi
I’ve made this recipe a ton of times and it’s a family favorite. Easy, hearty, and flavorful.
Corn Chowder
We’re in our last few weeks of colder weather, I think, so I need to cram in all the soups before it gets too hot. This one is a little lighter version of the classic favorite, and has some added veggies!
Stromboli
We’re taking a break from our traditional Friday pizza night and making this Stromboli! Easy and delicious.
Ribs with Fried Okra and Baked Beans
I have a rack of ribs in the freezer needing to be used, so we’re doing BBQ ribs for Sunday dinner. These cook all day in the crockpot til they’re super tender, and then serving with baked beans and fried okra (per my boy’s request). Delicious!
