Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Our weekly menu will give you some good dinner ideas

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners:

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, December 11 – 17

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

Our weekly menu will give you some good dinner ideas!

This week our meals were simple and delicious! We had some great dinners that are perfect for busy weeknights- including a few Hello Fresh meals and crockpot dinners which are always both delicious and quick to make!

Here’s a quick review of our weekly dinners:

Monday: Leftovers

Tuesday: Hello Fresh Flatbread

I got a few new Hello Fresh meals this week and they came in so handy for days when my husband had work events late, or I just needed a quick last minute dinner. This one was so good with ricotta cheese, veggies, and I added grilled chicken.

Wednesday: Hello Fresh Tortellini Bake

Another HelloFresh meal that was so good and so easy! It was start to finish about 25 minutes, and everyone gobbled this one up. My boys all went back for seconds! I also loved that it was one pan, so cleanup was quick and easy. (use code MERRICKFREE for free breakfast in every box for the lifetime of a new HelloFresh subscription! The breakfasts are SO GOOD).

Thursday: Beef Crockpot Tacos

I needed a simple dinner on Thursday because it was a busy day of work, and then running off to two separate holiday events. Crockpot tacos are always a good idea and everyone loves them. I just threw the beef in the crockpot early in the morning and it was perfect by dinner time.

Friday: Meat Lovers Pizza

We switched up our regular Friday night BBQ chicken pizza with a meat lovers pizza, per my 13 year old’s request. It was so good!

Saturday: Church Party

I signed up to bring cookies to our church party on Saturday and brought our favorite chocolate chip cookies — they’re always a hit!

Sunday: Italian Wedding Soup

We’ve had a favorite meatball soup for 17 years of our marriage, but this one has taken the cake as our favorite in the last few years. The combination of pork and beef in the meatballs makes it especially good and flavorful. You’ve got to try it!
