We had family come into town this weekend, plus Philip had a work dinner one night (I made grilled cheese sandwiches with white bread and pre-cut American cheese. Glamorous). So this weekly menu is a little lean on the recipes.
These were some other recipes we made this week though when I was actually cooking dinner!
Baked Chicken Parmesan
I used to make chicken parmesan all the time. Now I haven’t made it in years! This recipe comes from Skinny Taste, so it’s a little less heavy, and the kids loved it.
Potato, Kale, Bacon Frittata
I made a frittata years ago before we had kids and burnt the bottom to a crisp. Of course it happened to be when we had my brother in town (he was like 14 at the time) and I’m sure he thought his sisters cooking was very unimpressive.
This time it turned out much better. The potatoes added a heartiness to it that filled everyone up!
Adjustments I made:
- I added jalapenos because I had some I needed to use (I took out the seeds so it wasn’t spicy for my kids)
- 8 eights from the recipe instructions didn’t feel like enough when I poured it over the potatoes, so I added 4 extra
- Cooking time was more like 15 minutes for me, rather than 5 minutes. It could have been because of the extra eggs. But I kept jiggling the pan in the oven and it took almost 15 minutes before it was finally firm all the way through the middle.
- We agreed we should have made this with apple chicken sausage — it would have been more flavorful!
Baked German Pancake
I made this giant puff pancake on Saturday morning because we had family in town. They’re so easy to make and are a total show-off. They get so big and puffy and are great served with homemade syrup, honey, maple syrup, or yogurt and jam!
All American Chili
This is the best chili! I’ve been making it for about a decade and it’s the best.
Serve it with freshly made cornbread (you know, the kind that comes in a box…)
Tomato Spinach Sausage Pasta
This was a huge hit in our family. My husband especially raved about it. And it was so easy to make!
I omitted most of the hot peppers, and let people add their own, just so it wasn’t super spicy for tiny mouths.
Definitely recommend!

We do not often cook delicacies, so if there are guests in the family, it will be difficult to make delicious and nice rice dishes.
