A few things I’ve cooked for dinner in the past few weeks.  A really good Cafe Rio Pork copycat recipe, plus some great recipes for using up leftover ham from Christmas.

Recipes from last week’s weekly menu

The week after Christmas is filled with recipes to use up our Christmas ham. We’ve got ham soup, ham pizza, and ham pasta on the menu!

Cafe Rio Pork (for burritos or salad)

I’ve tried a few copycat Cafe Rio pork recipes, and this one is my favorite I’ve tried. I’ve been using it for about 7 years and it’s so good.

We usually do burritos (with uncooked tortillas), but her recipe also includes pico de gallo, and the famous tomatillo ranch.

This is a good cilantro lime rice recipe too.

Turkey Noodle Soup

I had some leftover turkey from Thanksgiving in the freezer, so I found this turkey noodle soup recipe. It’s simple and tasty!

It’s perfect with crusty bread or DINNER ROLLS.

Ham and Bean Soup

We made a big ham for Christmas dinner, so we’ve spent this week trying to get through it all. Ham and bean soup is one of my favorites! This one with celery, carrots, and white beans is perfect comfort food without being too heavy.

I served it with leftover rolls from Christmas dinner.

Ham and Peas Pasta with Garlic Parmesan Cream Sauce

This is another good ham leftover dish. It’s the most delicious creamy sauce, and the ham and peas compliment each other super well. Your kids will love it and so will you!

Ham and pineapple pizza

I never liked Hawaiian pizza until I tried it with chunks of ham and fresh pineapple pizza. After Christmas (or Easter) when we have leftover ham, it’s the perfect time to make Hawaiian pizza.

The trick for me is no canned pineapple. I only like fresh pineapple on my pizza, and it makes all the difference.

I use THIS PIZZA CRUST, this PIZZA SAUCE, mozzarella cheese, ham and pineapple, and a little dried basil on top.
