Time for this week’s dinner ideas! It was a crazy but fun week. Philip was traveling all week and the boys had Homecoming week, so we were quite busy!
Here’s a quick review of our weekly dinners:
Monday: Crockpot Tortilla Soup
Tuesday: Steak Quesadillas
Wednesday: Homecoming Parade/Out to Eat
Thursday: Crepes
Friday: Leftovers
Saturday: BBQ Chicken Pizza
Sunday: Cashew Chicken and Naan Bread
Crockpot Tortilla Soup
I’ve made this super easy weeknight dinner a few times. Throw everything in the slow cooker, shred the chicken, and serve. We top it with shredded cheese, tortilla strips, and avocado.
Steak Quesadillas
I made steak tacos on Sunday and had one large leftover steak and some leftover homemade tortillas, so steak quesadillas was a perfect easy dinner.
Crepes and Bacon
I was planning to make waffles, but the boys voted crepes and that was even easier. This is a super easy and yummy recipe!
Cashew Chicken and Naan Bread
Philip isn’t home for Sunday dinner this week so I’m trying some homemade curry. Philip hates curry so this is my chance and I hope it’s good!
