Time for this week’s dinner ideas! We arrived back after a fun Thanksgiving week, and ready to cook again. We even made a traditional Thanksgiving dinner.

Time for this week’s dinner ideas! I love traveling but I love being home and in a cooking routine again. It was a great week!

Here’s a quick review of our weekly dinners: 

Monday: Sheet Pan Shrimp Boil

Tuesday: Omelets

Wednesday: Chicken Burrito Bowls and Roasted Corn Salsa

Thursday: Italian Wedding Soup

Friday: BBQ Chicken Pizza

Saturday: Out to Eat

Sunday: Thanksgiving Dinner with Pumpkin Pie and Berry Pie

Sheet Pan Shrimp Boil

This is an easy and delicious dinner you can throw together on a cookie sheet and have ready in 30 minutes. We put the whole pan on the table and just eat off of it — my kids love it!

Omelet

Another quick and easy weeknight meal…I just mix a bunch of eggs and milk together with some spices, and then make each omelet individually with the veggies and cheese and meat that each person wants. I serve with homemade salsa and everyone is happy!

Chicken Burrito Bowls

This meal was delicious and healthy, but was a little more involved. I made Roasted corn salsa (which was delicious) cilantro lime rice, pinto beans (out of a can), and used rotisserie shredded chicken. We topped it with lettuce, avocado, salsa, and shredded cheese. Super yummy!

Italian Wedding Soup

My kids love meatballs, so this is always a winner dinner. I just make all the meatballs on a cookie sheet and then toss them in the soup at the end. Easy and delicious!

BBQ Chicken Pizza

We make BBQ chicken pizza every weekend and it’s so delicious. I use Mel’s Kitchen Cafe’s pizza dough and put Sweet Baby Ray’s BBQ sauce, grilled chicken, frozen corn, fresh jalapeños, and fiesta blend cheese on the pizza, and then we top with more BBQ sauce and crispy onions to serve. Yum!

Thanksgiving Dinner

Since we were out of town for Thanksgiving, but I love Thanksgiving food so much, I’m doing a traditional Thanksgiving dinner for Sunday dinner. We’re doing turkey, stuffing, cheesy potatoes, rolls, gravy, green beans, and two kinds of pie for dessert – triple berry and pumpkin!
