Time for this week’s dinner ideas! It was a super good week of dinners – I loved trying out some new recipes and taking another shot at the grill.

Crispy Chicken Tinga Tacos

I’ve been looking for new recipes lately and my sister recommended checking out recipes from Half Baked Harvest. This one immediately caught my eye, and since it was a crockpot meal, it was super easy to throw together, and then assemble when it was dinner time. It was DELICIOUS! Highly recommend.

Chicken Teriyaki Skewers and Roasted Brussel Sprouts

This is my second week of learning how to grill, and I tried my hand at chicken skewers. This recipe is a few steps, with making the marinade, letting it cool, cutting the chicken, letting it marinade, and then assembling the skewers, but it was worth it! It was so flavorful and delicious, and my boys gobbled it down! I didn’t add extra teriyaki on the grill cause I was afraid too much sauce would turn the boys off of it, and I was right. It was just a subtle flavor and they said it tasted like grilled nuggets from Chick Fil A. Mom win!!

Onion, Goat Cheese and Proscuitto Pizza

Both my older boys were gone on Friday night with different things so I did individual pizzas for Philip, San, and me. I made them cheese and BBQ pizza, and I used up some leftover prosciutto and goat cheese in my fridge for my personal pizza. This recipe is so good!!

Short Rib Ragu 

We’re having this for Sunday dinner and I cannot wait – it looks so good!

Smores Cookies 

As we head into summer, s’mores just seem like the right idea. These s’mores stuffed cookies look amazing.
