Our weekly menu will give you some good dinner ideas

Need some easy dinner ideas? With the weather warming up we all have spring fever and want to spend the afternoons outside, which means I’m always looking for maintenance dinners. If you need some other dinner ideas, check out all my past weekly menus RIGHT HERE.

Omelets

Omelets are such an easy dinner that you can make at the last second. And everyone loves being able to decide what goes in theirs! Sanny did JUST cheese with bacon on the side, Philip and I added a bunch of veggies, and the older boys did bacon, cheese, and tomatoes.

I made some salsa (I always use a can of this and toss it in the blender it’s THE BEST), and we put that on top. So yummy and easy!

French Dip Sandwiches

My kids LOVE these sandwiches, and I love that I can toss it all in the crockpot and it’s ready at dinner time. I just toasted up some ciabatta rolls in oven with provolone cheese, and served it with sautéed asparagus on the side.

Gnocchi Sausage Pasta

This dinner literally takes 15 minutes to make – it’s so simple and quick. It’s definitely not the healthiest, but the kids loved it so that’s a win.

Crepes

This weekend is General Conference for our church, with two days of watching the broadcast of sermons and talks from the leaders of our church. I made a big batch of crepes and put out a ton of toppings so we could eat them throughout the morning and afternoon. They are always delicious!

Vanilla Pear Pie

For Easter dinner, we’re having ham, potatoes, green beans, and all the regular things. Yum!

But for dessert, I’m making this Vanilla Pear Pie. I’ve made it a few times before for Thanksgiving and it’s THE BEST. You must try it!
