Time for this week’s dinner ideas! We were back after a week of traveling and it felt good to be back in my own kitchen. Also, we tried a new pizza this week and it was SO good!

Time for this week’s dinner ideas! The meals were delicious – we loved all of them!

Ground Beef Tacos 

My middle son requested these this week, and they’re a super easy week-night meal that just takes a few minutes to throw together. He ate five of them, so I guess that means they were a hit!

Cafe Rio

I made this recipe on Sunday, the day after we got back from Spring Break. It always makes lots, so we had plenty of leftovers for the week.

Crockpot Tortilla Soup

I’m trying to make a crockpot meal every Wednesday since those tend to be my busiest days. I’ve made this one before and it’s one of those recipes that you just toss everything in the crockpot and then it’s ready at the end of the day. My favorite kind of meal!

Gnocchi and Sausage Pasta

I’ve made this recipe before but it’s been a while and I needed to bring it back. It’s super simple, but hearty and delicious. And even with the “green things,” the kids will eat it.

Potato Chorizo Pizza 

The boys were bugged that we weren’t having our normal BBQ chicken pizza this week, but Philip pinned this on his Pinterest food board and I was immediately intrigued. We made it on the regular crust (from Mels Kitchen Cafe) rather than tortillas, and it was delicious!

Pot Roast

I don’t ever use a recipe for my pot roast, but it’s basically this recipe, with carrots, potatoes, onions, celery, etc. We also always add mushrooms!

Lemon Bars

We’ve had a lot of chocolate-y desserts lately, so we decided to switch it up with something lemon-y this week. These look delicious!
