Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Our weekly menu will give you some good dinner ideas

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners:

Monday: Turkey Noodle Soup

Tuesday: Leftover Turkey

Wednesday: Free Choice

Thursday: Charity Event

Friday: Mavericks Game

Saturday: BBQ Chicken Pizza

Sunday: Lasagana

Sunday Dessert: Ooey Gooey Butter Cake Bars

Turkey Noodle Soup

On Sunday last week, we made a traditional Thanksgiving turkey dinner since we were in Mexico for Thanksgiving. We always do turkey soup with the leftover turkey, and it’s the best!

BBQ Pizza

This is our favorite pizza. We put grilled chicken, BBQ sauce, frozen corn, and fresh jalapeños on it.

Lasagna

I don’t make lasagna very often cause it’s pretty involved, but it’s a good Sunday night dinner. This one is delicious and pretty simple!

Ooey Gooey Butter Cake Bars

This is one of my all time favorite desserts. It’s pretty easy to make and super rich and filled with butter (hence the name) but it is SO delicious. If you’ve never tried it, you must!

Weekly Menu, January 16 – 22

what I cooked for dinner this week

Time for this week’s dinner ideas! It’s been a busy week, but we’ve made a ton of simple, family favorites for dinner.

Our weekly menu will give you some good dinner ideas!

This week we’ve had my parents in town, plus lots of evening sports commitments, and a quick last minute trip to St. Louis for Philip and me (we took advantage of my parents being in town to sneak over there for a work thing for him). But this week has lots of simple and family friendly recipes that my kids absolutely love!

Here’s a quick review of our weekly dinners:

Monday: Baked Mac and Cheese

Tuesday: Leftovers

Wednesday: French Dip Sandwiches

Thursday: Fry Bread Tacos

Friday: BBQ Chicken Pizza

Saturday: Out of Eat

Sunday: Enchiladas

Baked Mac and Cheese

Baked Mac and Cheese

My oldest has been begging for baked Mac and cheese for dinner, so I made this recipe and it was tremendous. Super flavorful, cheesy, and the perfect crispy topping. Definitely heavy, but delicious. I think I’ll be making this again for the Super Bowl!

French Dip Sandwiches

French Dip Sandwiches

I don’t really use a recipe for this, but this recipe is basically what I do. We ended up losing power in our whole city for about an hour on Wednesday night, so I was super grateful for dinner in the crockpot so we could still eat without a hitch!

Fry Bread Tacos

Fry Bread Tacos

The boys requested these too for dinner, and they’re a crowd favorite. Easy, delicious, and fun to eat with the big puffy pieces of dough.

BBQ Chicken Pizza

BBQ Chicken Pizza

We haven’t made our BBQ chicken pizza for a few weeks and the boys have been begging for it. We use Mel’s Kitchen Cafe’s pizza dough, and then put BBQ sauce, grilled chicken, frozen corn, fresh jalapeños, and cheese on it. Then we add crispy onions and a drizzle of bbq sauce on before serving. Delicious!

Enchiladas

Enchiladas

Philip and I had to leave town for the weekend for a work thing for him, so we left the kids with my parents (who are currently in town visiting). So my mom might make something totally different, but I planned to make our favorite enchiladas with the leftover French dip meat. Easy and delicious! I found the recipe in a cookbook like 15 years ago, so I shared the recipe in this blog post!
