Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners: 

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, February 19-25

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

This week we made a simple, delicious meals that were a hit for the whole family!

Here’s a quick review of our weekly dinners: 

Monday: Italian Sliders and Corn

I’ve started making sandwiches or breakfast items for an easy Monday night dinner, and this was a sandwich recipe I found on pinterest that ended up being a major hit with the whole family. My boys each ate two sandwiches and loved them! The recipe recommended dipping in marinara sauce, so we did that and it was delicious. I served with corn on the cob.

Tuesday: Ground Beef Tostada and Edamame

This was an easy weeknight recipe that everyone loved. I had leftover tostada shells from a few weeks ago and used them to make these yummy ground beef tostadas. I served with steamed edamame.

Wednesday: Corn Chowder and Salad

My kids have been asking for corn chowder the last few weeks, and finally I made it this week. It’s been warmer weather, but soup is always a good idea. This recipe has bacon and is delicious.

Thursday: Homemade Mac & Cheese and Roasted Green Beans

I had homemade Mac and cheese on the menu a few weeks ago and then something came up and I didn’t end up making it, so my kids have been asking for it for a few weeks. We finally made it this week and it was so good. It’s a great dish to make ahead! I served with roasted green beans.

Friday: Italian Sausage Pizza and Fresh Cut Veggies

Last week I planned to make Italian sausage pizza, but the boys wanted BBQ chicken, so I made that instead. This week I made Italian sausage and served with fresh cut veggies on the side.

Saturday: Leftovers or Free Choice (Mom and Dad Date Night)

Sunday: Enchiladas with Corn Salsa

I’ve been making these enchiladas for years and they’re the best. You have to cook the meat in the crockpot overnight, or put it in the crockpot early so it’s ready to shred before dinner time, but it’s worth the effort. They’re so good and make even better leftovers. I served with corn salsa with chips. Yum!
