Some great dinner ideas from this week’s menu. Chicken pot pie, a few really good soups, and a really good quick and easy pasta recipe!

Last week I was out of town, so not much cooking happened while I was gone. This week I picked up a little cold, plus it’s been super rainy so there are lots of soups and stews on our menu!
It was a rainy week in Texas, and we were all feeling a little bit under the weather. This sausage and white bean stew with kale was just what the doctor ordered!
I followed this recipe, but made a few adjustments:
- I added shell pasta for a little more substance
- I used a can of white beans (rather than dried beans)
- I substituted the whole tomatoes for petite diced tomatoes
- I didn’t make my own broth – just used chicken bouillon
- And lastly, I grated about 1/8 of an onion into my pot — 2 cups of onions is outrageous.
It was hearty, flavorful, and delicious. We’ll definitely be making this one again.
I served it with crusty bread.
I make a sheet pan dinner almost every Monday night. Typically it’s based off of a recipe, but I mostly just toss whatever veggies I have onto the pan.
This week we did potatoes, sausage, and broccoli, but I also added carrots, jalapeños, and baby bella mushrooms. Easy and healthy!
This is an old favorite I’ve been making since Philip and I got married. It’s a similar soup to chicken noodle soup — very simple — and perfect for a sick week.
I love chicken pot pie, and this recipe from Mel’s Kitchen Cafe was a little bit of a different take on an old classic, so I tried it out.
The biscuits that she recommends are her tried and true biscuit recipe (I’ve made them tons of times) and having them on top of the pot pie was amazing.
This was a huge hit in our family. My husband especially raved about it. And it was so easy to make!
I omitted most of the hot peppers, and let people add their own, just so it wasn’t super spicy for tiny mouths.
