Philip was out of town for a few days at the beginning of this week, so our weekly menu was simple and kid friendly. I made our Blue Apron meal, plus easy chicken roll ups. We also had our Fall Fest this weekend!
We got THESE sandwiches in our Blue Apron box this week. They were simple to make and they were delicious. The foccacia bread alone was amazing, and the pesto was fresh and so flavorful. My kids gobbled this one up.
I’ve made several variations of sausage and pepper pasta. This was a new recipe and it was delicious! My kids all ate it super well.
These chicken roll ups are my kids’ favorite dinner. They’re super simple to make and they’re fun to eat. I used to love them as a kid, and I still do!
The bread bowls were easy to make and made for a really nice, non-soggy bread. The outside was crisp, and the inside was soft and chewy. For sure will make these again.
I planned to make these for our fall fest dessert, but we were too full after bread bowls and soup and a cheese board, so we made them on Saturday night instead.
I bought apple cider donuts from Trader Joe’s and I served the GRILLED PEACHES with the donuts, vanilla ice cream, and a drizzle of caramel on top. DELICOUS.
I’ve made this recipe for cafe rio copycat burritos for years and even though I’ve tried several other recipes, I always come back to this one. It’s super good and easy to make!
I serve with cilantro lime rice and pinto beans and homemade tortillas.
