This week’s weekly menu is so good! A really good pasta, some delicious desserts, our favorite tacos, and more.

This weekly menu has so many good recipes.

We started school this week, so we’re back in a good routine and I’m feeling motivated to cook again! We made lots of new recipes this week, plus a few tried and true favorites.

Sausage and Kale Rigatoni Pasta

This was a new recipe and it’s for sure going in the rotation. It was easy to make, super flavorful, and felt fancy. My kids gobbled it up!

Tacos Al Pastor

This meal took a little bit of prep work (defrosting the meat, cutting the meat, marinating the meat, and then preparing) but it was so good. The meat was tender and super flavorful.

We had a pretty big roast, so we had leftover meat that I served without the pineapple. I think it was better without the pineapple!

I served with fresh cheese and avocado on soft flour tortillas.

Tortellini Sausage Soup

I make this soup probably every other month. It’s an old favorite we’ve been making for a long time, and never fails. It’s flavorful, easy, and all my kids will eat it happily.

Pineapple Pulled Pork Pizza with Jalapenos

We do pizza night every Friday. I use THIS PIZZA DOUGH and used THIS RECIPE for toppings. Writing this post right now I realized I forgot to put on the jalapenos – dang it! But we added crispy onions on top and and it was delish.

Pork tacos with potatoes

This is another tried and true recipe. It’s such a crowd pleaser! We serve it with avocado and fresh cheese on crunchy corn tortillas. 

Apple Crumble with peanut butter and chocolate chips

I found this recipe in a Cooking for Two magazine that we got right after we were married. We made it a bunch of times back then, but I hadn’t made it in years! I pulled out the old recipe for our Back to School dinner this week and it was delish. 

I found the recipe online RIGHT HERE, but it’s still only a 2-person serving. I used 4 apples and multiplied the topping by a bunch in order to fill a 9×13 pan and generously cover all the apples.

Chocolate Molten Cake

My Father in Law is in town this week and we’re celebrating his birthday today. He requested chocolate lava cake for dessert, so we are making THIS CHOCOLATE MOLTEN CAKE tonight. I’ve made it a bunch of times before and it’s always a crowd pleaser. 

I always serve it inside the ramekins so I don’t have to worry about buttering and flouring the dish perfectly and having it come out clean. It makes it way less stressful.

Also I always use good milk chocolate chips, not bittersweet. I like a really sweet and rich cake!
