This past week we’ve made some fun new recipes and hopefully they’ll help give you some good dinner ideas. We made delicious Navajo tacos, carnitas tacos in the crockpot, and a fun new pizza recipe with caramelized onion and bacon.

Here’s what I cooked for dinner this past week:

Apricot Jam Carnitas

4/5 STARS – delicious!

I found this carnitas recipe in a Real Simple magazine probably 10 years ago, but hadn’t made it in years. The recipe calls for making it in the oven, but it always was messy and the pork didn’t get quite as tender as I wanted. So this time I made it in the crockpot (cooked on low for 6-7 hours) and it came out perfectly.

I served it with FRESH TORTILLAS, fresh cheese, and guacamole. So good, and super easy.

Caramelized onion and bacon pizza

A few weeks ago I mentioned that this summer I’ve been trying new pizza recipes. We were stuck in a rut with recipes, so I’ve been having fun trying a bunch of fun and unexpected combinations.

This week I made this delicious caramelized onion pizza with bacon and spinach. I skipped the white sauce in the recipe and just did a drizzle of olive oil on the dough. It was so good.

On Friday night we made homemade pizza, and since we had some dough left over, I used it to make this cinnamon roll pizza. Whoa, it was delicious. Super easy to make, and the boys gobbled it up.

Navajo Tacos

I’m pretty sure in my 13 years of marriage, I’ve never made Navajo tacos for dinner. They were so easy and super delicious. We served them with ground beef and other taco toppings and the kids gobbled them up. Definitely recommend this recipe.

Strawberry Lemonade Cookies

I’m usually a chocolate dessert kind of girl, but these strawberry lemonade cookies were so delicious. They were so fresh and summery and not overly sweet. Definitely recommend.

    Great recipes, thank you for sharing with us. In fact, after a trip to Singapore, where I often ate vegetarian food, I started cooking many dishes at home. Some recipes I took directly from the best vegetarian dishes, and it’s a great addition. However, I did not refuse the usual food.
