I was running a little low on groceries this week, but I found some recipes that had a lot of pantry essential ingredients so we were able to have lots of great meals even without fresh veggies!

Ham Hash
This is a really simple kid-friendly recipe. And a great way to use up leftover Easter ham (that was still in our freezer)! We all love this one.
Tomato, Spinach, Sausage Pasta
I was in a total slump of cooking this week, and didn’t have hardly any fresh veggies to use. But then I remembered this recipe and it can totally be done with canned tomatoes and frozen spinach!
Best French toast
I’ve been taking Fridays off of work the last few weeks, and we always make special breakfasts. This week the boys requested French toast. I ran across THIS RECIPE a few months ago and you create a batter instead of just egg and milk, and it makes a really good, really crispy French toast. Try it!!
Homemade Pizza
Of course we had to make homemade pizza this Friday. It’s tradition! This is our favorite pizza crust ever.
This week we made one Sausage/Pepperoni pizza, and one Bacon/Mushroom pizza. Delish!
Pork enchiladas
When I was really out of ideas and groceries, Fos suggested enchiladas. And somehow I had everything for those too! We cooked a pork shoulder roast in the crockpot all day and then used my recipe IN THIS WEEKLY MENU POST to make these delicious enchiladas.

This is a great Sunday dinner recipe! It’s time intensive, but the pay off is amazing. Try it.
