Last week I shared my daily schedule, and lots of you asked how I get my kids out the door in the morning in 15 minutes! One of the keys is a quick and easy on the go breakfast that I can make ahead.
Make ahead breakfasts make our mornings less rushed
Having breakfast ready to go each morning allows them to be able to sleep longer. I wake them up at 6:50am and we’re out the door by 7:05am.

These really easy breakfast burritos are a great source of protein for your kids early in the morning! My boys also love having one after school. We prep a huge batch of them on Sundays, and they hold up perfectly in the freezer all week.
2. Peanut Butter Protein Bites
My kids LOVE these. They’re great for protein packed breakfasts, or for mid day snacks. I definitely sneak one from time to time too!
You can customize these any way you want — add chocolate chips or another kind of baking chip, add dried fruit, or coconut flakes, cinnamon…anything you want!
Our favorite is with chocolate chips…can’t go wrong!
3. Easy Fruit and Yogurt Parfaits
I got this recipe for these easy fruit and yogurt parfaits from my friend, Marci, a few years ago. She made these as a dessert for a baby shower and they were so yummy but not over the top sweet. The nut and date crumble is what makes them!
We keep these in the fridge (not the freezer) and recommend layering them with the yogurt on the bottom, then the fruit, and then the crumble on top so the crumble doesn’t get soggy. They can last up to a week in the fridge. Layer them normally if you’re eating them right away!

These are fabulous ideas and recipes. That pumpkin one looks amazing. It looks like you may have substituted applesauce for the oil? i love how it is lower fat but still looks so good. i am definitely making those this weekend, but will probably add the chocolate chips – lol. curious if the kids have a no homework policy in texas like they did in california? i always found that interesting!!!
Could you substitute banana in the muffins for the pumpkin and make banana muffins instead?
