We make these breakfast burritos every Sunday and to stock up for the week ahead. My kids eat them on the way to school, after school as a snack, and we even have had them for dinner in a pinch.
They’re super easy to make, and are a great filling breakfast on the go!
Ingredients you’ll need
- Scrambled eggs
- Ground pork (or turkey, if you’d like)
- Cheddar cheese (sliced or grated)
- Tortillas (our favorite are the uncooked ones from Tortilla Land)
Super easy directions for these breakfast burritos
Cook your tortillas as directed. Scramble your eggs. Brown your pork. Slice or grate your cheese.
Now assemble! Place a little pork, egg, and cheese in each tortilla and wrap them up tightly.
TIP! Let the ingredients all cool before you assemble so they don’t get soggy when you re-heat.
How to store them in the freezer
Wrap each burrito in a square of aluminum foil, wrap it up tightly, and then place all the wrapped burritos in a gallon size ziplock bag. Freeze.
How to reheat your burritos
In the morning, we remove from the foil, wrap in a paper towel, and microwave for 1:15.
Some have suggested freezing them in freezer paper or wax paper so you could microwave them directly out of the freezer, but we haven’t personally tried that so I can’t vouch for it.
Also many have asked if the tortillas get soggy or the eggs get congealed. The answer is NO! They taste amazing, even after a week in the freezer!
