What I Cooked For Dinner: Sept 9-15

WEEKLY MENU SEPT 9

Just a few recipes are on our menu this week, but we made some amazing homemade pizza, and easy, simple chicken bowls.

 

This week I didn’t make it to the grocery store until later in the week, so our official menu for this week was pretty limited. We had leftovers one night, cereal another…you know how it goes when the fridge starts to get empty.

But once I got to the store, we had delicious homemade pizza and yummy chicken bowls.

Chipotle Chicken Bowls

This is an easy family friendly dinner that we have pretty often. And the great thing about these bowls is that everyone can make their own so everyone is happy. Don’t want beans? No problem. Extra chicken? Sounds great.

I make this super easy by doing a rotisserie chicken, but you can use the chicken recipe in this recipe.

Bacon, mushroom pizza

Not all homemade pizza is good, but this is really good pizza. We used THIS PIZZA DOUGH RECIPE and it was amazing, cooked it at 500 degrees on a pizza stone, and used these toppings:

Pizza toppings:

  • 1 TB olive oil
  • 1/2 cup cheddar cheese
  • 1/2 cup chopped mushrooms
  • 3/4 lb. cooked bacon
  • 1/4 cup parmesan cheese
