The last few weeks have been a little busy, so I haven’t been super consistent about planning my menus. I’ve still been making dinner almost every night, but a handful of those nights have been a quick throw-together-at-the-last-minute kind of meal.
But here are a few of the dinner recipes I’ve made in the last few weeks!
Sausage, Potato, & Broccoli Sheet Pan Supper
Mondays are our sheet pan dinner. This is an easy one, and the crispy broccoli is my favorite.
I serve this sheet pan dinner with a loaf of italian take-and-bake bread.
Mexican Street Corn Tostada
I love Mexican street corn, so I was super excited about this recipe. It was good, but unfortunately not as amazing as I expected. But my kids loved it!
I used canned corn, but think it would be better with fresh corn.
Meatball Subs
These are the easiest meatball subs — frozen meatballs, a jar of sauce, and hoagie rolls. My kids love this recipe. It’s a great dinner recipe for a last minute meal.
I serve this with steamed veggies.
Homemade Pizza
Friday is pizza night, and this week we made homemade pizza. I found the most amazing pizza crust for homemade pizza. You have to try it!
This is the pizza recipe I made:
Mushroom Bacon Pizza Recipe
Place a pizza stone in your oven. Preheat the oven to 500 degrees F. Do not place the pizza stone in the hot oven or it will crack.
Make this pizza crust recipe.
Ingredients:
- 2-3 TB Olive oil
- Shredded cheddar cheese
- Cooked bacon, crumbled
- Sliced mushrooms
Instructions:
- Drizzle olive oil over the prepared pizza crust
- Scatter the cooked bacon and mushrooms over the pizza crust
- Sprinkle the cheddar cheese over the top.
- Cook the pizza on a pizza stone for 12-15 minutes or until crispy and bubbly on top.
The Best Cinnamon Rolls
I’ve made a lot of cinnamon roll recipes in my life, and this was honestly the best one I’ve ever made.
These cinnamon rolls are unreal amazing. You must try them.
I served them with scrambled eggs and bacon. For dinner. Don’t judge.
Haha! Cinnamon rolls are a labor of love. They totally count as a meal! And breakfast for dinner is the best.
Haha I’d literally spent all day making them. I was NOT about to make another meal 😉
This is an gluten-free appetizer or snack. Super delicious, budget-friendly, kids-friendly food. I really like this dish.
