Time for this week’s dinner ideas! After a week of feeling under the weather, it was good to get back into some good meals!

Our weekly menu will give you some good dinner ideas

Time for this week’s dinner ideas! We were under the weather for last week and didn’t end up cooking a ton, but this week we’re feeling better and I was so happy to be back in the kitchen!

Here’s a quick review of our weekly dinners: 

Monday: Leftovers

Tuesday: French Dip Sandwiches and Roasted Veggies

Wednesday: Herb and Chicken Rice Pilaf

Thursday: Hot Honey Mustard Chicken

Friday: Carmelized Onion, Bacon and Mushroom Pizza

Saturday: Out to Eat

Sunday: Cafe Rio Burritos

Sunday Dessert: Peach Ice Cream

French Dip Sandwiches and Roasted Veggies

I had some leftover meat from our Sunday enchiladas, so I cooked up some au jus and made it into French dip sandwiches. They’re my kid’s favorite, and with some yummy roasted veggies, this was a winner dinner.

Herb Chicken and Rice Pilaf

This recipe looked so good, and was a nice hearty meal. But with football practice and church activities for the kids, we didn’t end up eating on Wednesday night until 8:30pm, so it had been in the crockpot for eleven hours at that point and the veggies and rice were pretty mushy. We’ll definitely have to give it another try and not cook it so long!

Hot Honey Mustard Sheet Pan Chicken

I’ve been trying to do some easy and healthy recipes lately, especially incorporating more veggies, so this one looked good! My husband is allergic to mustard, so I’m omitting the mustard and hoping for the best!

Carmelized Onion, Mushroom and Bacon Pizza

We’re branching out and trying a new kind of pizza! I’m not really using a recipe, just doing olive oil, bacon, caramelized onion, and roasted mushrooms. Loosely using this recipe!

Cafe Rio Burritos

This is one of our favorite Sunday dinners! It’s a little involved, but great to have for leftovers throughout the week.

Peach Ice Cream

We were under the weather last sunday, so we didn’t make this recipe for dessert. We’re trying again this sunday!
