This week our meals were simple and delicious! We had some great dinners that are perfect for busy weeknights, including some that can be made and ahead or frozen after for super yummy leftovers!

Monday:Â Green Chile
We had some of this leftover in the freezer, and it made a perfect easy weeknight dinner! It’s super flavorful and so delicious. Highly recommend this recipe. I’ll usually make it for Sunday dinner and then just freeze the leftovers in a bag to eat on another night.
Tuesday:Â Native American Fry Bread
I’ve been making this recipe for years and it’s one of my kid’s favorites. It’s quick and easy and everyone loves the fry bread.

Thursday:Â Chicken Roll-Ups
This was my favorite recipe growing up, and I’d always ask for it for my birthday. Now my kids love it too! I serve over mashed potatoes and sometimes add gravy over the top if I remember!
Friday:Â Ham and Pineapple Pizza
I used to hate Hawaiian pizza when I was a kid, cause I’d only eaten it with canned pineapple! I discovered I loved it when it was made with fresh pineapple and ham instead of Canadian bacon. Try it, if you haven’t already!
Saturday:Â Out to Eat
Sunday:Â Ham and Potato Corn Chowder and bread (mom out of town)
I’m headed to a work conference for a few days next week, so I made this soup ahead of time so my family would have something to eat on Sunday evening when I’m gone!
