Time for this week’s dinner ideas! This week’s dinners were great. The miso soup I made was delicious, and we had our classic Friday night pizza as well!

Indian Fry Bread

This is one of kid’s favorites and it’s an easy weeknight dinner. I used up leftover ground beef from last week and made some homemade salsa.

Miso Soup

This was a bit labor intensive, and I used old ramen noodles from the old school ramen packets and they were a little funky tasting. But overall it was good!! I marinated and cooked a pork tenderloin and sliced that up for the soup, and added soft boiled eggs and corn as well.

The idea was good, but I think the broth could be a little more flavorful. If you have a good ramen recipe, send it along – we’d love to try it!

Charcuterie Board

I had to set up a charcuterie board to photograph for an upcoming project, and since the charcuterie board was ready at dinner time, we just ate it for dinner. I had cheese, cured meats, dried fruit, fresh berries, crackers, and jam.

Pasta With Peas and Pancetta 

This was a new recipe I’ve never tried before. It’s kind of a fancy twist on the classic ham and peas pasta I make frequently. I love goat cheese so this was a hit!!

BBQ Chicken Pizza with Corn and Jalapenos 

Our favorite pizza! I use this pizza crust and add fiesta cheese, grilled chicken, frozen corn, jalapeños from our garden, and sweet baby ray’s BBQ sauce. We put crispy onions on top after it’s cooked!

Cafe Rio Burritos 

I’ve tried a few other Cafe Rio pork copycat recipes in the past but this is the best I’ve tried. I’ve been making it for over 10 years.

I’m making it with homemade tortillas and cilantro lime rice and pinto beans.

Nutella S’Mores Bars

We’ve made these before and they’re INCREDIBLE. We had to make them again!

    @halfbakedharvest has a handful of really yummy and easy ramen recipes. Closest (and easiest) ive found to the ramen i had in japan!
