Detox Chicken Soup
After a weekend of road tripping, we needed a detox day. This soup was actually so good and hearty! The kids didn’t love it, especially with the kale, but they ate it. The flavor was great.
Chicken Cacciatore
This is one of Philip’s favorite dinners. It’s super healthy and so flavorful. The chicken thighs make it amazing. Also it’s quick to throw together and then have it ready at dinner time!
Birria Tacos
Philip put these on the menu a few weeks ago and I never made them. Finally, I made them this week and I loved this recipe. It calls for coriander and it turns out Philip hates coriander….so he didn’t love it, but the kids and I gobbled it up. I also didn’t use the spicy peppers…just dried guajillo chiles with the seeds mostly removed and the rest of the seasoning. I served it with homemade flour tortillas and mozzarella cheese.
Pear and Goat Cheese Pizza
Philip and Fos went to the Mavericks game on Friday, so it was just the other two boys and me at home for pizza night. They wanted cheese and pepperoni pizza, so I decided to go rogue and make myself this pear and goat cheese pizza. It was INSANELY GOOD.
Thanksgiving Dinner
Whenever we do a destination Thanksgiving, we do a real thanksgiving dinner when we get home. Tonight is the night we’re doing it and I’m making turkey, stuffing, green beans, rolls, and gravy. I’m using this recipe for the rolls because they’re easy and quick and they are light and fluffy and delicious!
S’Mores Pie
I’m making mini pies for Thanksgiving dessert so we can try two different flavors. We’re doing pumpkin pie with graham cracker crust, and then s’mores pie. Hoping they’re good!
I made your birria tacos and had lots left over. The next night I made spiral pasta and mixed in the leftover birria meat and sauce. Added baby spinach. Topped with grated cheese and baked in oven for 20 minutes until cheese was melted and golden. This was delicious! The family loved the disguised leftover meal better than the initial birria tacos!
