Need dinner ideas? You’ve come to the right place! We had a lot of leftovers this week, plus it was Philip’s birthday this week, so I didn’t cook a ton. But the things I did cook were AMAZING.
Chicken Tortilla Soup
When we lived in California, we went to Island’s Grill pretty regularly. Their tortilla soup is SO good. They don’t have them here in Texas, so I tried making a copycat version for dinner this week.
I couldn’t find a good copycat recipe online, but I found this chicken tortilla soup recipe that looked similar, so I used it as a guide and made some modifications. I had some leftover shredded chicken and homemade chicken broth, so I didn’t bother using the crockpot.
I sautéed the onions and corn in olive oil in a pot, then added the canned tomatoes and the chicken broth. I brought it to a boil, then added the chicken and enchilada sauce and let it simmer for a bit.
I made my own tortilla strips by slicing corn tortillas into strips, spraying with olive oil, salt, and Chile lime seasoning, and cooking for 15-20 minutes at 400 degrees.
We topped the soup with the tortilla strips, Mexican cheese, and avocado. It was SO similar to the Islands soup and SO good!!
Breakfast Burritos
My kids love breakfast burritos and they’re so easy! We always add tater tots instead of potatoes, and they’re crispy and delicious.
Chicken Marsala
It’s Mother’s Day, and I’m still in the kitchen cooking — don’t worry, I don’t mind a bit! I actually love cooking. For Sunday dinner we’re having my friend Kayla’s amazing chicken marsala recipe that she created. The recipe is on her Instagram page way back in 2014, so it’s not the easiest formatting, but trust me — it’s worth making.

Philip’s birthday was this weekend, and his requested dessert was these chocolate scotcheroos. They’re delicious and simple to make!
