This week’s dinners turned out delicious! This week Philip was out of town, so I cooked a little less and made quick weeknight meals. On Monday, we celebrated Sanny’s birthday with his request of a meal and the yummiest cake. The week ended with a Sunday favorite dinner that was a bit more labor intensive but turned out so good.
Here’s a quick review of our weekly dinners:
Monday: Hamburgers and Fries, with Butter Cake Dessert

Hamburgers and Fries, with Butter Cake Dessert
Monday was Sanny’s 7th birthday and he requested hamburgers and French fries with butter cake for dessert. This cake is super simple and so delicious — half the people in our family request it for their birthday desserts.
Fried Rice and Potstickers
Philip was out of town most of the days this week, so I did very little cooking. This was an easy weeknight meal that I cooked up in 20 minutes. I made the fried rice and then used the trader joes pork potstickers.
BBQ Chicken Pizza
We make homemade pizza almost every Friday, and this is the pizza dough recipe we always use. It’s easy and super tasty. We like it with BBQ sauce, cheese, grilled chicken, fresh jalapeños, and frozen corn.
Green Chile with Homemade Tortillas
This is an old favorite that is a little more labor intensive before it goes in the crockpot, but perfect for a Sunday dinner. I serve with homemade tortillas!
Pizookie
This is our favorite cookie recipe ever, and it’s perfect as a pizookie! We cook it in a cake pan and top with ice cream, and then just eat right out of the pan!
