Spaghetti Carbonara

I needed a quick and easy recipe for Monday night when I was running behind and didn’t have my groceries yet, so I made this spaghetti carbonara which just uses a few ingredients and comes together in just a few minutes. My Butcher Box came with free bacon (you can get free bacon with every box through THIS LINK) so it was meant to be! Everyone loved it.

Ground Beef Tacos

Fos helped me make dinner on Tuesday and he chose ground beef tacos for his recipe…they’re his favorite and pretty simple.

Crockpot Chicken Tortilla Soup

This is a favorite at our house and an easy one to throw together quickly and let it cook all day. I leave out the enchilada sauce since not all my kids love that flavor. We add chopped avocado, shredded cheese, and crispy tortilla strips to the top. So good!!!

Hawaiian Pizza

I had some leftover ham in the freezer so we made pineapple ham pizza for dinner! Philip is super picky about pizza sauce, so I tried this recipe and it was so good! We use chopped ham and fresh pineapple…super delicious.

Smoky Pork Tinga Tacos

These are a family favorite and I’ve been making them for years! They cook all day in the crockpot and they’re perfect every time.

Strawberry Shortcakes

We felt like a fresh, fruity dessert for Sunday, so I made these delicious ones from Sunday Supper. I served them with homemade vanilla ice cream (we used the base of this ice cream — it’s so creamy and flavorful and delicious), and strawberry sauce. Highly recommend, they were so good!
