Time for this week’s dinner ideas! Philip was traveling this week, so I needed some quick and easy meals to put together with a busy schedule for both me and the boys.

Acai Bowls

I picked up these frozen açaí packets a few months ago on a whim, and decided to make them for dinner this week when Philip was out of town. The kids LOVED them.  I blended the packets with frozen blueberries, a fresh banana, and almond milk, and then we topped with granola, fresh fruit, and honey. So yummy and easy!

My boys are obsessed with basic ground beef tacos. They’re a great quick weeknight dinner they can help me make!

Homemade Tamales and Charro Beans

I made these recipes a few weeks ago and when we didn’t eat all of them, I stuck the leftovers in freezer bags for a busy day when I needed dinner quickly. This was perfect and they reheated very well.

BBQ Chicken Pizza

BBQ Chicken pizza is our fave! We do Sweet Baby Ray’s BBQ chicken, fiesta blend cheese, grilled chicken, fresh jalapeños, and frozen corn on top. I serve it with a drizzle of BBQ sauce and crispy onions…so good! I always use this pizza crust and it’s super easy and delicious.

Steak and Chickpea Pasta

This is a recipe I’ve been making for years, and it’s super simple so we always add a sliced grilled steak on top. Delicious!
