Time for this week’s dinner ideas! I am taking advantage of being in town this week, this summer has felt crazy, and it was nice to slow down a bit and make dinner each night.

Our weekly menu will give you some good dinner ideas

Time for this week’s dinner ideas! It was a great summer week at home, with some really good meals!

Here’s a quick review of our weekly dinners:

I’m going to add this little overview every week so you can see our true full weekly menu to get dinner ideas.

Monday: Crepes

Tuesday: Leftovers

Wednesday: Homemade Tamales and Charro Beans

Thursday: Italian Wedding Soup

Friday: Bacon and Mushroom Pizza

Saturday: Out to Eat

Sunday: Red Beans and Rice

Sunday Dessert: Homemade Salted Caramel Ice Cream

Crepes

On Mondays, one of the boys chooses the meal and helps me cook. B chose to do a crepe bar, so we made savory and sweet crepes with our favorite crepe recipe from Mel’s Kitchen Cafe.

Homemade Tamales ad Charro Beans

We’ve made these tamales before, and it’s a great way to use up green Chile (we had that last week). But this time I made homemade charro beans with them and they were DELICIOUS. Easy to make, so flavorful, and great with the tamales. We’ll be making these again for sure.

Italian Wedding Soup

This is another favorite soup recipe. The meatballs are delicious! Sometimes I make extra and freeze them, but usually they just get gobbled up by hungry boys. They’re so good.

Bacon Mushroom Pizza

One of our favorite pizza recipes! It’s just olive oil, cheddar cheese, cooked bacon, and cooked mushrooms. We also use this pizza dough recipe.

Red Beans and Rice

This is one of our favorites! I always tone down the creole seasoning so it’s not so spicy for my kids. I’m serving with cornbread muffins!

Salted Carmel Ice Cream

We’ve made homemade ice cream a few times already this summer, and here’s another one we’re adding to the list! It looks so tasty.
