I was planning on being out of town this weekend, but my plans changed, so I only had 4 dinners planned, and no Sunday dessert! Luckily, we had a lot of leftovers that we’ll be enjoying this weekend.

Crock Pot Honey Bourbon Chicken
This recipe was super quick and easy to toss in the crockpot and have ready at dinner time. It doesn’t actually have bourbon in it (the name Bourbon chicken refers to Bourbon Street in New Orleans). I served it with roasted cauliflower.
Cajun Surf and Turf Pasta
Since we’re on our grocery spending freeze and trying to work through stuff we already have in our freezer, I decided to try this surf and turf pasta to use up some steaks and some shrimp I had in my fridge. It was delicious and easy. I served with crusty bread and cut up strawberries.
Flavorful Italian Soup
I found this recipe in a magazine when we were first married, and it’s been in the rotation every few months since then. It’s really simple, but it’s delicious! I served it with crusty bread and fruit.
Sausage, Egg and Cheese Breakfast Sandwiches
These are some of our favorite easy sandwiches for dinner. We had some frozen English muffins in the freezer that needed to be used, and some sliced cheddar cheese in the fridge that I didn’t want to go bad. The maple butter in this recipe was an unexpected addition, but it added a really fun twist. I served this with air fryer Tater Tots and a berry smoothie!
