Time for this week’s dinner ideas! I traveled this week, but I thought it’d be helpful to see what our weekly menu is like when I’m not cooking every night.

Tuesday: Italian Sausage Penne Pasta

Wednesday: Smoked Pork Sandwiches

Thursday: Leftovers for boys

Friday: Philip ordered pizza for him and boys

Saturday: Philip and boys out to eat

Sunday: Stuffed Shells

Sunday Dessert: Ice Cream Sundaes

Italian Sausage Penne Pasta

This was a super quick and easy dinner to make on a busy school night. It took about 20 minutes to put together and everyone loved it. I didn’t have bell peppers on hand, so I just omitted those…I’m sure no one was mad about it.

Pork Shoulder Sandwiches

I love crockpot Wednesday! It’s my busiest day of the week, so it’s best to have it ready to go at dinner time. This one was super easy. I actually didn’t even do the rub…I just dumped all the ingredients in the crockpot and cooked on high for a few hours til it was super tender and crispy on some pieces. I served it on Hawaiian Rolls and served with chips and fruit. Easy peasy.

Stuffed Shells

I was out of town all weekend, so I made stuffed shells ahead of time for my family. It’s one of our favorite recipes and a great one to stick in the freezer. Just defrost for a couple of hours before cooking, or add a few minutes to your cooking time if you’re cooking from frozen.
