Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners: 

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, January 15-21

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule and limited cooking appliances!

Our weekly menu will give you some good dinner ideas!

Our kitchen renovation is still going strong, so we’re getting creative with meals using the Instapot, crockpot, and other appliances. These week night dinners are simple and perfect for a busy schedule!

Here’s a quick review of our weekly dinners: 

Monday: Meatball Subs

Meatball subs are one of those super easy dinners that doesn’t require a recipe, but I love to make my own meatballs cause they’re better than store bought ones. I always make the meatballs from this wedding soup cause they’re a mixed pork and beef recipe and they’re so good.

Tuesday: Ground Beef Tacos

Whenever I ask my kids what they want for dinner, they request ground beef tacos. They’re easy to make without a recipe too, but this is a good recipe if you need one!

Wednesday: Spaghetti & Meatballs

On Monday I made extra meatballs and saved them for spaghetti and meatballs this week. Easy and yummy!

Thursday: Chicken Noodle Soup

I put this on my menu last week but then we ended up having leftovers and I didn’t make it. So this week I made it — it’s the best recipe. If you don’t want to use a whole chicken, just sub for chicken thighs or breast and broth!

Friday: Date Night

Saturday: Pizza

Since we did date night on Friday, we did pizza on Saturday. We made our favorite BBQ pizza since it’s everyone’s top choice. I always do Mel’s Kitchen Cafe’s pizza dough cause it’s easy and delicious!

Sunday: Street Tacos

These are our all time favorite tacos. They’re a little bit of prep work, but worth it cause they’re DELICIOUS. If you need a good at home street tacos recipe, seriously try these.
