Here are our favorite dinners from this week! Some family classics and a delicious chocolate lava cake we make every Valentine’s Day.

Italian Wedding Soup

I made this soup a few months ago and it was so good, we had to make it again. To make it a little easier, I scooped the uncooked meatballs onto a cookie sheet and cooked in the oven at 400 degrees F for about 12 minutes. This made the cooking time way shorter because I could make the soup and the meatballs simultaneously!

I also left out the spinach because I knew my kids would turn their nose up at floating green stuff in their soup. It worked, because my 4 year old gobbled this up and asked for more!

Navajo Tacos

Navajo tacos are one of my kid’s favorite dinners! They’re super easy to make, and my boys are obsessed with the fry bread.

I also use canned pinto beans instead of dried (cause I would never remember to soak them ahead of time), and I just pour the whole can into the pan after browning the meat so it becomes a little more saucy instead of dry.

We top with shredded cheese, homemade salsa, and guacamole!

Omelets with Bacon

Philip was out of town for one night this week, and I wanted something simple to make.

I’m much less motivated to make dinner when he’s not here. So we made omelets!

I cooked some bacon, made some salsa, and let the boys decide which toppings they wanted. I did bacon, cheese, spinach, and mushrooms for me, and I served them with English muffins we had in the back of the freezer.

BBQ Chicken and Corn Pizza

We had leftover BBQ chicken from the Super Bowl last week, so I saved that in the fridge and used it for our BBQ chicken pizza. We put corn and jalapeños and crispy onions on top as usual!

Chile Verde

We’re staying in for Valentine’s Day, and to make things as easy as possible, we’re making green Chile. I just toss it all in the crockpot and it’s done at dinner time – best Valentine’s Day gift ever.

We serve them with these homemade tortillas, which are so easy and AMAZING.

    I made the chocolate lava cakes for valentines. i 1 1/2 the recipe and used the smaller 7″ ramikins but wondered how full (with the batter) should each ramikin be? I know your recipe says 4 of the 10″ ramikins but it is hard to gauge if i overfilled them or not. i had to bake them longer than the 7-8 minutes. some of them were more done than others. wondering if you can give a better idea on this. thanks
