Here are our favorite dinners from this week! It was a pretty crazy week with the weather in Texas and we’re so grateful we were able to have some food in the freezer and pantry!

Need some dinner ideas?  I love putting together my weekly menu, it helps so much with keeping the week on track. This week was definitely out of the ordinary, but I’m glad we had power for enough days and that it was turned back on for us! Ham and Mushroom Pasta

This was a super simple recipe and my family all gobbled it up. We were running late the night I made it, so I didn’t actually bake it in the oven since I didn’t want to wait 25 more minutes for it to bake. I also didn’t put the mushrooms back in when instructed, because I knew two of my kids wouldn’t want them. So the three of us that did want them just sprinkled them on top of our pasta at dinner.

Air Fryer Pork Chops

These were super easy and so delicious. This is the air fryer that I have and love.

Baked Cauliflower

I served this with our air fryer pork chops. I love roasted cauliflower, and this was super delicious.

Carnitas Tacos

When our power went out this week with the storm, I was nervous about not having much to eat for dinner. So I cooked a giant pork shoulder in the crockpot all night (praying the power wouldn’t go off in the middle of the night…and it didn’t, thankfully!).

I didn’t use this recipe (although it looks delicious) — I just added salt and cooked on high for 12 hours until it was crispy on the bottom of the crockpot and super tender. We had it in tortillas with salsa, avocado, and fresh cheese.

Beef Enchiladas

I’ve been making these enchiladas for YEARS and they’re the best. I found the recipe in a cookbook probably 12 years ago, so I shared the recipe in THIS MENU POST!

Strawberry White Chocolate Bars

We always love to make a dessert for Sunday night! These look amazing and are super easy.

    Mmm your carnitas look delicious! I’ve been off of instagraM fOr a couple Of mOnths and I’ve missed your posts! You’re the only account – besides my cloSest friends and family – that i truly miss. Thank you fOr being such a positive influencer!
