If you need some dinner ideas, here’s what I cooked this week! I made one of our favorite Sunday crockpot meals, a new high protein recipe, and a tried and true quick weeknight meal. 

Our weekly menu will give you some good dinner ideas! Here’s a quick review of what I cooked this week for our family dinners.

MONDAY: breakfast tacos

  • We love breakfast for dinner, and this was a super easy and yummy breakfast that wasn’t our normal pancakes or waffles.

TUESDAY: Steak fajitas. 

  • I’ve been making THESE Chicken Fajitas for years, but we decided to switch it up and make steak fajitas. Yummy and healthy!

WEDNESDAY: Cajun air fryer chicken with Caesar salad

  • I planned to make something else for Wednesday, but ended up not having the groceries I needed. So I pivoted it at the last minute and made some cajun air fryer chicken. Air fryers make everything cook super fast and still be yummy, tender on the inside, and crispy on the outside.

THURSDAY: Keto Chicken Parmesan Casserole

  • PW found this recipe last week and asked me to make it. He loves chicken parmesan, and this was a high protein, lower carb option, and it was good and super easy.

FRIDAY: pizza party

  • Friday was our last day of school for the year, so we threw a pool party with some friends!

SATURDAY: out to eat

SUNDAY: Green Chile Pork 

  • I’ve been making this recipe for years and it’s one of our very favorites. It’s a little bit labor intensive to get prepped, but the result is incredible. Highly recommend.

what I cooked for dinner august 2025

Last week I asked ChatGPT to make me a menu plan, and it made making dinner easier than ever. I never knew how much brain power I could save by outsourcing my nightly meal plan! Here’s what it picked for dinners this week. 

 

We started school this week, which means we’re in new routines and I’m back to a quiet house during the day while the boys are at school. I really want to maximize my work time during the school hours, and also I really want to plan meals ahead so it’s mindless at the end of the day.

So I asked ChatGPT to make me a lunch and dinner menu for the next two weeks.

Here’s the prompt I gave it:

“Create a 14 day macro friendly meal plan for a (*your weight*) lb woman that is intermittent fasting, so no breakfast, only lunch, snack, and dinner. Make the lunches easy to make ahead, and sometimes the same meal so it’s easy to batch cook once and have a few days of lunches.”

It gave me a big list of dinner ideas, and I used them as starting points to make dinners that I knew my family would eat and like.

 

Monday: Salmon with roasted asparagus + quinoa

  • We ended up having salmon bowls (sort of like this) with cucumber, avocado, edamame, and sriracha, with protein rice and asparagus on the side. Everyone loved it!

Tuesday – Turkey burger patties (no bun) + roasted zucchini + baked potato

  • I made turkey burgers for my husband and me, and used up some hamburger patties in the freezer for the boys, so they were happy! I did roasted zucchini in the air fryer, and since I hate baked potatoes, I made homemade french fries…just chopped potatoes into tiny strips, coated with 1 TB of avocado oil, added salt and pepper, and air fried for almost 20 minutes. This was a winner!

Wednesday – Grilled shrimp + cauliflower rice stir fry

  • I followed this day pretty closely, just serving it over white rice instead of cauliflower. I bought stir fry frozen veggies to make it extra simple, and added some frozen corn and edamame to make it a little more hearty. This recipe looks very similar to the original, if you want to try!


Thursday – Chicken fajitas (peppers, onions, low-carb tortillas)

Friday – Homemade pizza

Saturday – out to eat between basketball games

Sunday – steak and green beans 

  • This was the menu item for Friday, but I switched it to Sunday since we like to have a little fancier dinner on Sunday usually. This was perfect to grill up some steaks and serve with green beans.

10/10 recommend asking ChatGPT to make your menu! I’m sure you could ask for exact recipes, but I chose to use my own since I have my favorites, or like to get creative off of the original idea. And don’t forget to ask Chat to make you a grocery list based off of the menu — that’s the most amazing part!
