Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners: 

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, April 7-13

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

Here’s a quick review of our weekly dinners: 

Monday: Steak Tacos

I made these last week, actually, and I had defrosted a whole pack of steaks so I needed to use the rest up and needed a quick and easy weeknight meal. Everyone loved these last week, and they loved them this week too! Highly recommend.

Tuesday: Air Fryer Chicken Thighs with Naan Bread and Kaizen Rice

I hadn’t gone grocery shopping yet on Tuesday, so we were scrounging for dinner. I still wanted it to be healthy and high protein, so I pulled some frozen chicken thighs out of the freezer and popped them in the air fryer for a quick and yummy last minute dinner. I served with frozen Trader Joe’s naan bread and Kaizen high protein rice. Everyone was happy with this dinner!

Wednesday: Smash Burgers

My boys were THRILLED when I said burgers were for dinner! I used Shred Happen’s idea and made mine on a lower carb tortilla and it was delicious.

Thursday: Ground Beef + Sweet Potato Bowls

I made a “make it yourself” version of this beef and sweet potato bowl, so everyone could add what they’d like and leave out what they’d like. But this viral bowl idea is WORTH THE HYPE. So good!

Friday: BBQ Chicken Pizza

This is our favorite pizza dough recipe! We make it with our favorite BBQ chicken pizza almost every weekend.

Saturday: Out for B’s Birthday

Sunday: Barbacoa Roast with Roasted Cauliflower/Potatoes and Bread

I found this recipe from my new favorite chef, Shred Happens, and I’m excited to make this for sunday dinner this week. I’m serving with roasted cauliflower and potatoes (for my non-cauliflower dudes) and some crusty bread. I hope it’s a hit!
