Time for this week’s dinner ideas! We had a great week of meals – and a ton of leftovers from out late Easter dinner!

We did a belated Easter dinner on Sunday, so this week we worked through the leftover ham. Ham and pea pasta is one of our favorites and so quick and easy to make. It’s also a major crowd pleaser with the kids!
Philip found this new recipe this week and it was a great clean and simple dinner that used up the rest of our ham. The boys didn’t love the cabbage, but Philip and I thought it was delicious.
I’m always on the lookout for a good crockpot dinner and this one was super simple and delicious! It was flavorful and tender and so good. I served over rice.
BBQ Chicken Pizza
We can’t go more than a week without our favorite BBQ chicken pizza! We use Mels Kitchen Cafe’s pizza dough and put BBQ sauce, grilled chicken, frozen corn, and jalapeños on it, then top with crispy fried onions when it comes out of the oven. So good!
This is an old faithful recipe I’ve been making for probably 10 years. It’s not exactly like Cafe Rio, but it’s delicious. It’s also amazing that it cooks in the crockpot all day and is ready at dinner time. I never make the tomatillo dressing cause we always do burritos, but the recipe is there and is delicious.
I almost never make cakes because they’re a lot of effort and make so much dessert, but my father-in-law is in town this weekend and all next week so I decided to make a cake and we can enjoy it slowly all week. This strawberry recipe looks unreal amazing…I can’t wait to try it!
