Need dinner ideas? You’ve come to the right place! We made some delicious meals this week – a classic family favorite and a delicious vegetable soup. Our grocery order got a bit messed up this week, but we were able to adjust easily. Hope you love these dinner ideas!

Minestrone Soup

I RARELY make vegetarian meals. We’re big meat eaters. But this was a really hearty soup that was actually pretty good! Even my kids ate it and seemed to enjoy it.

Indian Fry Bread

This is one of my kids FAVORITE dinners. It’s easy to make and you can do lots of variations.

I tried for a healthier version by putting the dough in the air fryer, but it came out like a cracker — not puffy and soft, but thick and crispy. So don’t try that. We just did one and then went with oil for the rest of the dough.

Pancakes

We had a mix up with our grocery order this week, so it was a day delayed. When dinner time rolled around, I was still holding out hope for my groceries to arrive, but when they didn’t I pulled out my trusty pancake recipe. They’re the best pancakes EVER.

Cafe Rio Burritos 

For Sunday dinner, I usually like to make something a little more time intensive and hearty. This is the best cafe rio pork recipe I’ve tried (and I’ve tried several). We make it with cilantro lime rice, homemade tortillas, and pinto beans. No one else in my family will eat the salad, so I skip the delicious dressing (but there is a recipe in there for it and it’s amazing)

Chocolate Carmel Brownies

After a huge cafe rio dinner, how about some rich caramel brownies? Ha! We’re trying out this recipe for Sunday dessert — can’t wait to try it!
