Time for this week’s dinner ideas! We did Easter dinner this week since we were traveling last week, and made some other great meals!

Tortellini Soup

This is one of our all-time favorite soups. It’s hearty without being heavy and filled with veggies AND delicious cheesy tortellini. My kids will even gobble this down.

Crunchy Beef Tacos

My middle son is obsessed with ground beef tacos and begs for them weekly, so we made them this week and he ate six of them! This recipe took 20 minutes to make and was delicious and super simple.

Chicken Cacciatore

I try to always make crockpot meals on Wednesdays since those are my busiest days. This meal is packed with veggies, but so flavorful and so delicious. I serve it over angel hair pasta.

BBQ Chicken Pizza

We make pizza every Friday night, and our favorite is BBQ chicken. I use this pizza dough recipe from Mels Kitchen Cafe and put Sweet Baby Rays BBQ sauce on it, fiesta blend cheese, chopped grilled chicken, jalapeños, and frozen corn. After it’s done cooking we top it with a drizzle of BBQ sauce and crispy onions. It’s delicious!

Easter Dinner

We missed Easter dinner last week because of our trip to NYC, but I got a huge ham at the grocery store for $4 so I had to take advantage of making it. We’re doing ham, cheesy mashed potatoes, and green beans for dinner. Maybe I’ll get adventurous and make some rolls too. This is our favorite roll recipe…it’s actually a hamburger bun recipe, but they make amazing dinner rolls that are sweet and soft and fluffy!

I’ve been making this berry pie for years and it’s a favorite!
