Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!
Our weekly menu will give you some good dinner ideas!
This week I’m finishing my blood sugar reset with Being Brigid, so I’m making my own meals and trying to incorporate what I’m eating into my family’s dinners, so they still get more normal meals, but I don’t have to cook double. I’ll share some of my modifications below!
Here’s a quick review of our weekly dinners:
Monday: Leftovers
Tuesday: Pecan-Crusted Trout Recipe
I planned to make this fish for Sunday dinner, but my husband requested lasagna instead, so I made that at the last minute. I had all the ingredients for this fish recipe, so I made it for Tuesday night. It’s an easy recipe and so delicious! My kids love it so much.
Wednesday: French Drip Sandwiches and Broccoli
I was having beef and broccoli for my Blood Sugar reset program, so I made beef in the crockpot for everyone and served theirs with rolls and cheese to make French dip sandwiches.
Thursday: Out to Eat with Grandpa
Friday: BBQ Chicken Pizza and Butternut Squash Zip Zag Fries
We had our regular friday night pizza, and I found these cute butternut squash zig zags at Trader joes, so I cooked them up in the air fryer to create some fries. Yum!
Saturday: Date Night
Sunday: Cafe Rio Pork Barbocoa Salad with Tomatillo Dressing
This is one of our all time favorite Sunday dinners. It’s a labor of love, but it’s a fantastic dinner. I usually serve with homemade tortillas, cheese, pico de Gallo, Pinto beans, and cilantro lime rice.

I would love if you could do a post on the blood sugar reset you did. What was it like, why you did it, your results, how you found out about it, and would you do it again? also, I think you also posted about an ab rehab program you are trying and some other exercises, I can’t find that post or links anywhere. Can you post about that also? Thanks. I’m very curious.
