Time for this week’s dinner ideas! It was a really busy week with a lot of events, but I loved the time we had to eat together at home.

Time for this week’s dinner ideas! While we had a lot more meals out/leftovers than normal, I still wanted to share what a busy week of dinners looks like for us.

Here’s a quick review of our weekly dinners: 

MondayHamburgers + Roasted Green Beans

The boys requested hamburgers this week, and typically I would make them with fries, but after a week of Thanksgiving dinner and lots of other big meals, I went with leftover green beans and roasted them up for a slightly healthier side dish. Yum!

Tuesday: Breakfast Burritos

These are a super easy dinner that I make often. Everyone loves them! I don’t really use a recipe — just ground sausage, scrambled eggs, and cheese, with a little bit of salsa.

Wednesday: Tortellini Sausage Soup

This is one of our all time favorite soups. It’s hearty and delicious and easy to toss together. Perfect for soup season!

Thursday: Turkey Noodle Soup (leftovers)

I made turkey noodle soup with the leftover turkey (and homemade broth from the turkey carcass) after Thanksgiving, and we had a giant pot of it, so we’re doing leftovers to get through it!

Friday: Order in Pizza

Saturday: Barbacoa Tacos

Usually we eat out or order in on Saturdays, but since we ordered pizza on Friday, we did crockpot tacos for Saturday dinner. I love a meal that can cook all day and be ready in the evening!

Sunday: Short Rib Bolognese with homemade noodles

I haven’t made this recipe in a while, and it’s been a while since I made homemade noodles! This is a great Sunday dinner!

Sunday Dessert: Chocolate Scotcheroos

One of our favorite family desserts!

Weekly Menu, April 1-7

Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

Our weekly menu will give you some good dinner ideas!

This week we made a simple, delicious meals that were a hit for the whole family! It was a busy week so we made dinners that were easy and used up ingredients we already had in the fridge but also made some fun items for April Fools Day and our church conference!

Here’s a quick review of our weekly dinners: 

Monday:April Fools Dinner, spaghetti and meatballs with green beans and cantaloupe

Every year for April Fool’s Day I do a silly little dinner for our family. They think it’s hilarious and it makes for some fun memories! This year I gave everyone a dice and numbered all the food and you had to roll for your food and eat it in order. I made spaghetti and meatballs, using the meatballs from this Italian wedding soup recipe, cause it’s the best!

Tuesday: Leftovers

Wednesday: Black Bean Tostadas & Strawberries

This recipe was delicious and super quick and easy for a busy weeknight. I added ground beef for a little extra substance and protein, and subbed the black beans mix for Siete brand refried black beans. I also added cherry tomatoes to the corn salsa. This was a hit!

Thursday: Eggs, bacon, and Kringle Danish

PW was gone for a work dinner on Thursday, and I got home late from football practice with my youngest, so we made scrambled eggs, bacon, and the Kringle Danish a friend had brought over earlier that day. I’d never had a Kringle before, but it was a raspberry one and it was AMAZING. She got it at Trader Joes!

Friday: Pizza

We have leftover ham from Easter dinner, and that’s always the best excuse to make all the ham recipes! I’m making ham and pineapple pizza and always use Mel’s Kitchen Cafe’s pizza dough for any pizza I make.

Saturday: Cinnamon Rolls

This weekend is a weekend long conference for my church, and it’s kind of tradition to make cinnamon rolls. I’ve been using this recipe for years and it’s by far the best homemade cinnamon roll recipe I’ve ever made. I’ve screwed up plenty over the years, but this one always turns out great. I usually make half cinnamon and half raspberry rolls, using this recipe.

Sunday: Lasagna

I’ve been making this lasagna for the last few years and it’s tremendous and not too much work! Definitely recommend.

    Cute! Would you recommend getting a shorter trench over a longer one? I would love some styling tips about which to choose! I just purchased a longer one and I am debating on returning it or getting it shortened or wearing it as is.
