We’re back from our trip to Austin and San Antonio, and I’m back in the kitchen making dinner every night! Here’s our weekly menu as we get back in a good routine.

Our weekly menu will give you some good dinner ideas

This week’s weekly menu has our favorite breakfast burritos, the best chili recipe, a new pasta dish, and our favorite enchiladas! Lots of good and easy recipes this week.

Breakfast Burritos

My kids love breakfast burritos, and it’s an easy dinner to throw together. We use store-bought uncooked tortillas, and sub out the potatoes but add tater tots. Delish!

All American Chili

We found this chili recipe in a cookbook probably 10 years ago, and we’ve made it every few months since then. So good, super hearty, and easy to toss together.

I served it with corn muffins.

Orecchiette with Sausage and Broccoli

This was a new pasta dish that Philip found last week, and we all loved it! Super quick and easy to make, and filled with veggies. Definitely recommend.

Bacon Mushroom Pizza

On Fridays we have pizza! We had bacon mushroom pizza this week, which is one of our very favorites.

Here’s how we make it: It’s just a drizzle of olive oil for the sauce, cooked bacon, sauteed mushrooms, and cheddar cheese on the top. We cook at 500 degrees F. for about 10 minutes. Super easy!

I always use THIS PIZZA DOUGH RECIPE.

Beef Enchiladas

These are our favorite enchiladas ever. So flavorful, and easy to toss together when you cook the meat in the crockpot all day.

The recipe is from an old cookbook I have, so I shared the recipe IN THIS POST.

We sometimes make them with shredded pork, but this time we made them with shredded beef.

Butterfinger Cookie Bars

On Sunday I bake a dessert. This week we’re making these butterfinger cookie bars that Philip found. WHOA they look over the top good!
