We’re down in Galveston, Texas this weekend for a little beach vacation before the boys head back to in-person school tomorrow. So I made a very loose weekly menu this week because I needed to clear out the fridge a bit.
But we made a few delicious things and we have a really good recipe planned for tonight for Sunday dinner when we get back!
Pan Seared Rib-Eye
On Monday we celebrated Labor Day. Philip grilled some ribeye steaks that we’d bought at Costco a few weeks ago on sale, but if you don’t have a BBQ grill, I swear by THIS RECIPE for cooking them in a pan on your stovetop.
Green Chile Stew
We’ve been loving all things green chile this summer. Philip found this recipe on Pinterest for CROCKPOT GREEN CHILE STEW and we gave it a try. The picture makes it look gross, but it was amazing.
It took a little prep work in the morning, and my grocery store didn’t have hatch chiles so I substituted anaheim peppers (I still used hatch enchilada sauce) and instead of roasting the chiles in the oven, I just charred them on the stovetop. It was delicious.
I served it with fresh homemade tortillas.
French onion soup
Philip and I both love French onion soup. I probably wouldn’t usually make it for Sunday dinner, but since we’re heading back from Galveston today, I needed a recipe that didn’t take a lot of prep work.
Brown Butter Toffee Cookies
We’re making these for dessert tonight. Cookies are my very favorite dessert, and I love trying new recipes. You can’t go wrong with brown butter AND toffee!
