After a week long vacation, we needed some veggies in our diet again. So this week’s weekly menu has lots of veggies, but in lots of really good recipes!
Summer Vegetable Gnocchi Salad

We do sheet pan dinners all the time, but this was a fun twist to add gnocchi into the mix. The boys didn’t love it, honestly, with all the vegetables, but I thought it was a good lightweight veggie-packed recipe for dinner.
Orecchiette with Sausage and Broccoli
4/5 STARS – Easy and kid friendly!
I’d never cooked with orecchiette pasta, but it was a hit! My boys gobbled this down, even with lots of broccoli in it.
I served it with crusty bread and fresh cherries.
BBQ Chicken Pizza with Bacon and Corn
5/5 STARS – super good!
We loved this pizza! We’ve been super into BBQ chicken pizza lately, but the bacon and corn really made it extra good.
We topped it with crispy onions and a drizzle of extra BBQ sauce.
Homemade Lasagna
I’m making this homemade lasagna for dinner tonight, so we haven’t tried it yet. I don’t think I’ve ever made homemade lasagna in my 13 years of marriage, so I’m excited to give it a try!
