Since we’re on the subject of eating healthy, I thought I’d share my new favorite summer food that’s kind of healthy. A few weeks ago we stopped by Nordstroms to return a clothing item and decided to grab dinner at the Nordstrom Cafe. I’d never eaten there before, but took the lady behind the counter’s advice and got the berry salad. You guys, this salad changed my life.
The next day I recreated it for lunch, and then Philip was working late so I made it again for dinner. And then I did the same the next day. And then I proceeded to make and eat it for every possible meal for the next week straight. I got a little sick of it at that point so I gave it a rest for a week or two, but then I made it the other day and it sucked me right back in.
With the berries and spinach it’s the perfect summery salad with a little bite from the cheese and a crunch from the nuts.
Berry Summer Salad
baby spinach leaves
red leaf lettuce, chopped
strawberries, chopped
blackberries, chopped
crumbled feta or blue cheese
unsalted raw almonds
sugar
raspberry vinaigrette (I used Marie’s)
In a small saucepan, heat a few tablespoons of sugar over medium heat until it begins to liquify. Stir constantly to avoid burning. As soon as it’s liquified, add the almonds and coat completely with the liquid sugar. Remove from pan and allow to cool, then chop to your desired size.
Combine with the rest of your ingredients, using your desired portions. Then see if you can keep yourself from eating it for every single meal for the next week 🙂
Wendy's has a similar salad (sometimes anyway, as it's seasonal), but with chicken. It's actually quite good!
A similar salad that I die over is with baby greens and spinach, dried cranberries, almonds or pinenuts, blue cheese crumbles, apples, and then a cranberry citrus poppyseed vinaigrette. I'll have to try this one! QUESTION: what brand of raspberry vinaigrette do you use? I hate buying dressings and then not liking them.

DUDE, Nordstrom's cafe has quite a few surprises. I've only eaten there once but I was pretty impressed. You're reminding me that I've gotta go back and try it again.
