I love sharing what I make for my family of 5 each week for dinner. We’re in the busiest phase of life, so these are quick and easy meals that my 3 preteen and teenage boys will eat!

This week was full of pretty uncomplicated and simple dinners, which is what we have to go with now during this phase of life. Try out some on your next menu!

Sunday: Tortellini Soup

This is a family favorite and a great soup that’s hearty and easy to throw together!

Monday: Cilantro Lime Chicken with Sweet Potatoes

I wasn’t sure how this would be, but it ended up being delicious! I cooked it in the air fryer and dinner was ready so quickly.

Tuesday: Shrimp & Quinoa Power Bowl

This was a great weeknight meal that everyone loved. I love doing these kinds of bowls deconstructed so everyone can add what they like.

Wednesday: Blackened Salmon with Corn Salsa

This is one of our favorite dinners – my kids love salmon, and blackened salmon is easy and quick to make!

Thursday: Smash Burger

This is a healthier version of In-N-Out burgers, and these were delicious!

Friday: Mom and Dad date night

Weekly Menu, November 10-16

I love sharing what I make for my family of 5 each week for dinner. These are quick and easy meals that my 3 preteen and teenage boys will eat!

This week was full of really good fall-feeling meals. All pretty simple, because that’s just the phase of life we’re in!

MONDAY: Chili and Cornbread

I’ve been making this chili for years and it’s so good and hearty. I love the combination of sausage and ground beef. Even my kids love it!

TUESDAY: Eggs, Bacon + Waffles

We had a busy night of basketball and church activities, so we just made some easy breakfast for dinner with frozen waffles, eggs, and pre-cooked bacon!

WEDNESDAY: Salmon, Asparagus and Edamame

My kids love salmon and this is an easy weeknight meal that is healthy and hearty. Everyone loved it!

THURSDAY: Spaghetti and Meatballs

Another easy weeknight meal – I used frozen meatballs for this one cause it was quick, and then used protein spaghetti to get a little more protein for my kids.

FRIDAY: Pizza

I was gone this night so the boys ordered pizza in!

SATURDAY: family date night

SUNDAY: Roast with Veggies and Homemade Bread

We love a roast for sunday dinner! I don’t follow a recipe – just throw the meat and the veggies in the crockpot and let it cook all day. I love making homemade bread on Sundays – this is the best bread recipe ever!!
